The Best Potato Soup Recipe

As it’s starting to get colder, nothing warms you up better than coming in from the cold to a nice hot bowl of your favorite soup! Potato soup is one of my family’s favorites, and this recipe couldn’t be better! It’s creamy, hearty, and does just the trick for a hot meal on a cold day! I like to make this in my dutch oven on the stovetop, but you could also use any slow cooker you have!

Ingredients

* about 2 lbs baking potatoes, diced
* 1 onion, finely chopped
* 32 oz chicken broth
* about 2 cups hot water
* 1 tsp salt
* 1 tsp pepper
* 1 tsp garlic powder
* 8 oz cream cheese
* 1/2 cup green onion, chopped
* 2 cups shredded cheese
* 2 cups heavy cream
* 4-5 strips bacon, cooked and chopped

 

Let’s Cook!

1. Add potatoes, onion, spices, chicken broth, and water to pot. Cover and let simmer for about 30 minutes, until potatoes are soft.
2. Smash potatoes a little bit. Add the cream cheese, green onion, shredded cheese, and heavy cream. Stir in and let simmer about 20 more minutes.
*If you’re cooking this in the crock pot, do step 2 about 20-30 minutes before serving.
3. Add chopped bacon and serve with your favorite toppings.

And there you have it! A super simple, yummy dinner that takes less than an hour! It’s especially easy if you use a slow cooker because you don’t have to worry about manning a hot stove around the kiddos! Happy cooking! Enjoy!
